Unit Description:
Sodexo Leisure has an exciting Executive Chef 3 position available at the world famous Museum of Science and Industry in Chicago, IL. This world class facility includes a modern food court, a Jazzman's Cafe, an Ice Cream Parlor and high end, high volume catering. This is a large multi-faceted account and requires an Executive Chef experienced in proper kitchen management. The Executive Chef is responsible for the successful execution of very large, high profile catered events. Executive Chef must also manage the day to day functions of a large kitchen and retail operation. The Executive Chef will have face to face contact with all clients including internal board members and trustees. The ideal Executive Chef candidate will have the following preferred experience/skills
-Managing the culinary operations of a full service restaurant or hotel highly preferred
-Very high level catering in a venue of at least $6 million annual F&B revenues
-Must have knowledge & experience creating & costing menus including specialty menus for catered events
-Must have experience with Safety and Sanitation controls, HACCP, food ordering & inventory as well as hiring, training & managing staff
-Candidate must be extremely organized, detail oriented and task focused
-Candidate must have experience in successfully controlling food and labor costs
-Expert computer skills preferred
-Exemplary communication skills with the ability to lead a large team
Position Summary:
Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in the largest accounts or in an account requiring a highly skilled Executive Chef. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Qualifications & Requirements:
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 3 years
Basic Functional Experience - 4 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
Sodexo will require a background check and may require a drug screen for this position.
